Is saltimbocca only alla romana? Definitely not. The recipe exists in several variations all along the peninsula. This recipe despite not being properly orthodox because Enzo used pork instead of veal (much better indeed), was suggested by a friend who used to run  a restaurant and him being a Rome, gives it a thumbs up..

In these hot summer days in Lucca the only times to go out are in the early morning or after 6 pm, when the temperature drops. We dropped in on our guests to clean the pool and hope they are enjoying cappuccinos by the pool. The village was a hive of activity and the cooler air in the hills was bliss. We had a go at the lucky village dip. I just loved the way the tickets were rolled. and threaded through a piece of ditalini It must have taken hours. . Marina, you are a genius!
